So you should have plenty of opportunity to grind. If I recall correctly the Renan guards actually give the best XP to grind on.
Also if I'm not mistaken... that boss kind of fakes you out because partway through the fight you trigger a sort of "tutorial" boost strike that then depletes most of his HP and starts an additional phase of the fight.
So what I'm saying is, you probably don't actually have to be lvl 15 to beat him. Just be sure to not let yourself get hit with his slow lumbering moves because they do really hurt.
The first boss was tutorial. he hit hard but telegraph as hell. just go in. run around and observe his moves set first before start fighting him.
if you are in the castle already, I believe coming back in fort in portal/door etc refresh the spawn, it same with other places so you can just stay in place where you can kill mobs and once you cleared them enter nearest portal/door/passage and go back will refresh it
