Elemental royalty are pretty much among the strongest units which won't get out of control unless being affected by strong enemy spells. You need equip them with artefacts t make them be able to destroy common army, search for "SC creation" for details. Of cause about every SC can be countered by some army with some mages (there are just too many ways to kill in dominions to counter all of them), so generaly you should think where enemy has potential. For example if you make an SC against abyssia, he should have fire resistance for sure.
P.S. There is pretty much fun in SC - anti SC combat. One I was playing for Fomoria, my main battle evocations were based on air magic. So my enemy equiped his SC with lightning resistance artefact. So as some of my mages have water 1 magic, they were able to cast frozen heart. I scripted them to do it and this killed that SC.
Fun fact: if you camp one on a throne province, it'll eat the throne - even yours! Cataclysm came early, kids!
