Even for blindfighters, I don't think unsurroundable always makes sense - you might only be able to 'see' things in front of you with your sonar/alternate sense, OR you might be able to 'see' all around you but still not have the ability to coordinate well enough to negate harassment penalties.
The unsurroundable ability is usually given to units with extra heads (not just eyes - so I guess the idea you also need brains for proper defensive coordination) or unusual body plans (like the Vastness).
Edit: I personally don't quite understand the reasoning that Spirit Sight automatically offers perfect darkvision. You can see the spritiual essence all you want but it won't make you not stumble upon a spiritually non-existent rocks in the darkness. Although if every rock has a spiritual essence, that works out - it might be just the 'realism' speaking.
The one case where spirit sight shouldn't work is detecting something that is both mindless & invisible in the darkness - but that seems like an extremely rare situation.
