Victory Conditions
There's the victory condition where you set by Dominion and you can adjust the bar (limit 5000), does this mean every single province must be gained to win? Regardless of map size and province numbers?

Also Conquer all victory condition, how does that differ from the above victory condition?

You can win by dominion when you conquer enough provinces that people no longer believe in the other pretender or pretenders.

Your dominion can spread to provinces that you don't physically control. Therefore, if you concentrate on growing your dominion (lots of temple, blood sacrifice for some nation, using stealthy preachers in enemy dominion, using heretic units ot items) you can spread your dominion without physically conquering the province. You can set the victory condition so you don't need either conquer all province or have your domminion in all provinces. Note that you can kill other pretenders by having your dominion completely wipe out their dominion. The game speak for this is domkill.

Great guys thanks, and the Conquer condition? Is that like classical destroy their founding city?

The "Conquer All" victory condition means, IIRC, that you must be the only Pretender that controls any province -- that is, you must utterly erase any trace of your opponents, whether by taking all of their lands by force, or by wiping out their Dominion.
