Hate to bump an old thread but if you really have an interest in doing dynamic head/body destruction like SoFII, I might cry tears of joy.
Here's a video that shows a demo of the system. Take note of the 12 different pieces of head.

I've never seen it done better than SOF 2's GHOUL 2 system. Especially with the "Weapon Mod v5". The mod wasn't really needed, but it made the firearms behave a bit more accurately, which worked both for and against you. One thing that was really memorable was that if you were using a 9mm handgun, or the MP5 and firing at someone wearing body armor, it would take 5-6 rounds to penetrate the armor. And they had a custom damage texture on the body armor. Of course shooting them in the head would kill them outright if they weren't wearing a helmet. Shooting them in the unprotected arm or legs would still have the original effect.
If you used a high-powered rifle like the AK-74 or M-4, the M-60 machinegun, it would penetrate the body armor on the first shot. It was a neat mod, and it was done really well. And the GHOUL system, or something on par with it needs to come back.
Taking one shot at what would be 200 yards in real life, seeing the enemy drop, and walking up and seeing a clean hole through their head was neat. I guess the Sniper Elite series does pretty well, but it's a little too slow paced, and it only happens in the cutaways.
