You could also play a spellcaster and summon a familiar and another creature to help you in combat, but I guess you'd like to avoid that as well?

Of course game will be harder but that's the fun part. Being a rogue, using traps, sneak attacks is fun. Or playing an elf mage. Ghost visage, long sword and flaming weapon... Game was super easy.
You recommend play 2 times the game with diferent players? I explain:
The first time with a normal difficulty to enjoy all the game (without think in the achievements).
The second time with a Hardcore player to do all achievements in order (and with guide).
After of this, would be the better change to the first normal char to gain levels and prestige?
So yeah, I played game only solo with a single main character and that was totally doable. With some classes you may experience some difficulties tho, like wizard or sorc got terrible start without any meatshields.
