Maybe go monk yourself and simply punch everything without any need for armor. I've played through the entirety of HotU with a monk simply wearing the haste robes before.
Become a caster. Due to its structure, Sorcerers are better in game than Wizards (who are better in TT for their adaptability. Most solutions in NwN are of the type of 'throw fireballs until it stops getting up' type).
Or just ask yourself "What would be fun for ME to play?" Half the fun of the game is to make some harebrained character concept and trying to make it work. Which generally isn't too difficult in the OC, since it's much easier than the other two.
- You have less than 9 INT (mod -2). Your character then might start speaking in a silly way
- You play an Elf race (or any custom subrace of it). Then some key NPC might comment on that during plot moments, like Nasher
Aside from that I don't think there's any unique differences. Everything else will pretty much happen in your own mind.
