Does that make sense?
Im playing Paladin now, im planning to go for the champion of thorm, but does that also make sense to put 1 point in the wizard/sorcerer?(the one with spellbook) to just "remember" the spells instead of having them one time use? and rn im paladin lvl 5

I'm far from being an expert on builds, but if you take a level of wizard or sorcerer, it will have no effect on your paladin spells/abilities. You'll get new arcane magic spells that have a chance to fail if cast while wearing armor, and if you only take one level, that means you'll only get a small selection of rather weak first level spells (like e.g. choose 5, memorize 2, in the case of the wizard, IIRC). You'd then have to take your armor off to cast these two low level buff spells (like Protection vs. Evil) before combat and they'd only last a short while. So it doesn't sound like such a good idea to me.

It doesn't work that way. They have separate spell "books" which operate independent of each other.

so is there any way of memorizing paladin spells? i have some spells but it's just one time use and cuz of that im mostly like "nah i won't use it might come more handy later" and cuz of that im mostly ignoring the fact i can use spells as paladin

that's what i felt i will be doing, just buffing before the fight but if that's bad idea is there a way to memorize paladin spells? xD im kinda new to that game i remember i played it as a child but without understanding any mechanics, now i have a lot of new stuff to learn xD

As a paladin, you have memorized those spells, but if you, say take a level of Wizard, you'll get a new pool to pull from, the Arcane list. Due to... magic... they're two different sources (praying to your god isn't the same as mental preparation) and are completely independent. I wouldn't suggest taking levels in Wiz or Sorc, since arcane spells have an Arcane Spell Failure chance. So if you want your Magic Missile having a 50% chance to not work, feel free to take it.
Short answer: you'll get a new set of spells to cast, not your Paladin spells, if you take a new casting class, regardless of what it is.

What you want might be a cleric (maybe as your next character). They can buff before combat without taking their armor off and they can wear heavy armor and also handle themselves well enough in melee. Plus summon creatures to support you. Depending on the domains you choose, you also get some good extra spells that are usually just for mages, like Stoneskin or Ice Storm. They're pretty powerful (possibly overpowered) all-rounders (minus the rogue skills, of course, but a good combination of caster and fighter, not that hard to play either).

Maybe it would be feasible to add a few cleric levels to your paladin? That would be a question for someone with more building experience, but to me it sounds like that might make more sense.

I would probably go with Paladin/Champion/WM with longsword (since majority Palaweapons are longswords in many modules). Another build I had fun with was Smiter which dealt tons of damage several times per day.

However, I am adept of Sorcadin so I kind of can't tell you how to play Paladin well.

That's a tricky one. Cleric and Paladin mesh well, but those characters are mostly Clerics with a Paladin splash so you can add Charisma to saves on your Cleric. When people add a few Cleric levels to a character, they tend to go for 8 Cleric levels with the strength domain so they can fill those level 4 slots with extended Divine Power to buff a low BAB. Paladins are a high BAB class, and they already get all of the Cleric Buffs of note. So, while you would be getting more spell casts (from duplicate spell lists), you would have a low caster level in both classes, so your buffs that scale with level would be weaker (e.g. Divine Favor) and your buff duration would be shorter. since im learning some basics yet, i don't want to add more mechanics yet than needed like smithin, maybe one day will try that tho

i have no idea how praying works yet, i just see anyone that can give me blessing im ok with it xD also in this case, im not gonna go for that wiizard stuff xD
