That's because with a partner, the enemies/bosses have to keep both of you in mind. "Split aggro", they call it. When the enemies/bosses are dealing with your partner, this will give you time to heal or use any consumables or buffs.
For that reason, people often time accuse this game of artificial difficulty on solo (while still calling it "the easiest Souls-like???? Yeah, I don't get it either).
I don't know about "the easiest Souls-like" but it's definitely on the easier side of things, for a number of reasons.
the AI partner makes the game very easy honestly if you want a challenge dont take them even the secret final boss was a push over
It's been awhile since I have seen it but the accusations, that I saw, were about the game being specifically designed with a partner in mind. Also some other criticism of the game was about how NG+ was handled (basically only boosting up enemies' HP bar and damage output and no other changes was done to the enemies).
And them calling the game the easiest Souls-like was because of the A.I. partner aspect.
Which is kind of stupid imo. So this quote:
