It won't, it just switches the sword
You just have to use a sword that is already a two handed sword.
Unlike Fromsoft games, you can't choose to one-hand or two-hand weapons to adjust damage scaling. Also, there's no offhand equipment like shields. You won't find one-handed swords that scale off Strength until later in the game, but if you want something in the one-handed sword that's a bit meatier with decent guard damage reduction, try the Broadsword.
There are some one-handed swords that look like they should be held two-handed, but remember this game is 200% anime. If Cloud or Guts would be embarrassed to carry it around, it's not a two-handed sword. Yakumo offers a wonderful two-handed sword in the exchange menu, the Oni Bane. If you want to get it quickly and efficiently, sake or the Burgally doll are best. You can buy valuables from the revenant by the Outer Crossroads mistle.
If you want something that can block like a champ, try Zweihander, but you'll have to change your Blood Veil, Blood Code, and Gifts appropriately if you want to avoid slow-rolling!
