Tarmac?
I am a bit confused. I built taxiays, runways, aircraft stands and so on. But what is the tarmac exactly used for?

To fill up dead space with concrete really. If you look at an airport in real life, the plane stands aren't really surrounded with grass, but with concrete. Tarmac.

In real life there is no "dead space". The area you are reffering to as "dead space" is called "Apron". Apron basically is like taxiway, planes and permitted vehicles use that area for maneuvering. Eveything else thats not being used by the traffic is covered with grass in most cases.
So OP's question is actually legit.

I know what a tarmac/apron is but i did not know what other purpose the apron might have :)

In game or in real life?
I wouldnt know what its supposed to do in game, but in real life it has no other purpuse than maneuvering of the traffic for fueling/loading/unloading/boarding etc.
In real life you have 3 different maneuvering areas: RWY, Taxiway, Apron. RWY has the highest access restriction, then goes taxiway and then comes in apron where most of the airport vehicles have access to and thats the place where most of the airport work related to aircrafts is being performed. Aircraft parking spaces ("Stands" in game) are also part of apron.

I work on an airport, and trust me, there's a ♥♥♥♥ ton of dead space.. I was anwsering his question what the purpose is of the "tarmac-tile" in the game. -> fill up dead space

The Apron is also used as Stand IRL for smallers planes such as DH8D (Dash8-Q400). Approns usually dont have a connection to the terminal such as jetways and the like. The ATC termonology would be "taxi to apron stand xx", this is also used on groundhcarts

"apron means a part of an aerodrome, other than the manoeuvring area, that is intended to be used for the loading and unloading of passengers and cargo, the refuelling, servicing, maintenance and parking of aircraft and the movement of aircraft, vehicles and persons engaged in services necessary for those purposes;"
