I wouldn't say the enemies are bullet spongy at all. With soul mode you can rip through hordes of enemies no trouble.
Some enemies have more HP of course. If you like doom/quake you'll be right at home.
BUY THEM BOOOOOOOOOOOOOOOOTTTTHHH
And yeah no real bullet spongey enemies. Maybe some mini boss type enemies but like THEYRE MINI BOSSES.
A Youtuber said that some of the enemies in episode 3 are basically bullet sponges, but I haven't gotten that far yet, so I can't verify it personally.
That was that Aussie guy, Ggmanlives or something like that.
Said "bullet sponges" go down in Hard difficulty with a couple swings of the mace or a well-planted planet in the face.
So yeah.
I don't think bosses should count, since they are supposed to have way more HP than enemies you fight in levels.
