Pumpkin princess help

Hi all! I'm working on getting the pumpkin princess achievement. Ive seen in a few places that you have to fertilize it every Monday until the next autumn festival.

Here's the timeline I experienced -
Year 1 autumn festival
Two days later (Monday 22) I get the start of the mysterious seed
next day (Tuesday 23) I meet the mysterious man and give the seed to Emily
I specifically kept an eye out the next Monday (Winter 1) and even reloaded a couple times to make sure, but there was no quest.
I keep playing, and finally the quest pops up on SUNDAY the 7th.

Is this expected? I don't want to spend a whole game year working on this only for it not to be enough. Is it normal for the quest to start on a Sunday and will it now only be on Sundays? Or is just the first quest on a Sunday and any future instances will be on Monday?

Update - the very next day (Monday 8) the quest came up again. I guess now my only question is if its okay that the quest didn't come up the first Monday after the festival

A similar thing happened to me. I am about one (in game) week away from completing it - hopefully. I will let you know if I have any issues, unless someone beats me to it.

Edit: I've had the relevant quests show up, but haven't completed them yet. By the way, Emily doesn't ask you to fertilize the Pumpkin Princess on the week that the festival takes place, so don't let that throw you.

I plan to play more tomorrow, and hopefully the achievement shows up. I'll let you know, one way or another.

Update: The quests showed up like they were supposed to, and I managed to get the Pumpkin Princess achievement. So just keep at it, rhi_dacted! Make sure you take care of fertilizing the pumpkin every Monday (I scheduled a repeating event for me to help to remind me) and make sure you have 50,000 gols on the day of the Autumn Festival.
