Very late reply, but the Wiki had Merlin always listed as a bachelorette, so I assumed you can date her for real (after the fake date), I never tried though. I still think she's a legit bachelorette since she's listed in the Wiki, so my vote would have gone to her. :P

Merlin is not date-able aside for that one quest as far as I know. Else she would be in my top list too.
