The sparring game is pretty much a warm-up for some of the later boss fights, and dodge-rolling is extremely useful there.
A useful strategy in many of the fights is two or three quick attacks -> dodge-roll -> repeat.
There is a bit more about tactics on the wiki, but the article isn't very good :(

It is also useful to level up your clothing as soon as possible (depends on your character level, can be bought from Carol's Store on Central Plaza), and to equip items that help in defence or crit chance.
In the early game, you might want to craft three talismans and equip them to get a quick defense boost. You'll get access to better items later.

You might also want to explore the school for a small satchel and equip that item.
Edit: some of the sparring partners are pretty tough, but you'll also find a number of them to be around level 8 or so. Old guy Russo is remarkably strong, he is ex-army. Emily's Grandmother is a lot easier.
Thanks for all the help! Its wonderful with such a helpful forum ^_^
