I just didn't know you wouldn't be able to divorce once you got married, I thought I could build a relationship up with Emily to get it to the point where I could propose and then divorce Sonia. I didn't know when I got married that the characters had different perks when you're married to them. There should at least be a warning before you get married to say "are you sure?" and that you won't be able to divorce them later.

These sorts of games rarely have divorce options. If you planned to divorce your spouse, don't marry 'em in the first place. Especially since the perks are shown before you marry 'em.
And of course your girlfriend is gonna lose affection if your wife catches you together. Your wife should, too! Honestly, I'd much rather not have divorce an option ever and have it where once you get married, all "lover" status with other people goes back to BFF or something.
That or do the newer BokuMono thing in the finalized version of the game where you can only court one character at a time instead of hareming the town.
This game is modeled after "Stardew Valley" and there you have a divorce and it's uninteresting, because you pay the mayor and wife moves out.
