waiting 15 days for the tree to produce crystals for the plane. Had 1 day left to harvest, Went back today now it says 7 days. What?

I had a similar situation with my apple tree. I think it takes a certain amount of time to mature and then it starts it regular resource growing period, so if the crystal takes 14 days to harvest, once it's mature, it'll give you crystal every 7 days, so it's 21 days until your first harvest.

Not positive though.

Dex has the right of it. Trees grow in multiple 7-day "stages". Once they look mature, it's another 7 days for their first harvest. Thankfully after that, you'll get another harvest every 7 days guaranteed. It's just the waiting for the initial one that's a pain.

In Portia time ~~ it goes by quick. Just don't watch it, like the boiling water theory.

I hate this process. To me, a day seems so valuable in Portia Land. So a day wasted, with nothing to do but stare at my crystal trees seems so futile.

All I'm doing now is building relationships with my fellow Portians and fulfilling their wishes and commissions...

There should have been a warning or some kind of recommendation from at least Nora and Lee to grow crystal trees early in the game...
