Report a translation problem
A Beast Master kinda build.
Fighter/Bard/Dragon Disciple/Eldritch Knight. Can become an amazing tank, casting reasonable level bardic spells in full mirthril plate and with as big a shield as you care to carry.
I do not pick any of these for my main character, though. Valerie is perfect for either.
For my main, I choose the class depending on the alignment of the character I want to take to the end of the game.
Lawful Good Paladin, Lawful Evil Necromancer (Wizard), Chaotic Neutral Kineticist.... for my main character, I tend to stick to 'an unity of purpose'.

Unarmed monk amulet works with your dragon form attacks... High cha means a ton of added AC, good persuasion checks..
The biggest problem with this was just microing dragon form due to how huge it is.. Fortunately I suspect turn based will make it a breeze and be even more powerful..
I wish I were still playing Pathfinder/DnD because this would be a awesome rp character to play as due to all the things dragon deciples get with flight.

Anyone familiar with Grim Dawn would know of Crates forums that have 99% of the builds gathered into 1 spot.
I haven't tried it myself, and I play on normal difficulty, so I really have no idea how it would go on higher difficulty settings. As a plebeian, the biggest potential snags I see are 1) barbarians can't cast any spells while raging, and 2) sorcerer hit dice will counterbalance barbarian hit dice, making the character a lot less durable. Then there's the fact that armor causes arcane spell failure, so you'd probably want to start with mage armor and get bracers later on.
However, if you focused on taking buff spells and pre-buffing before rage, it seems like you might get something pretty cool. (A barbarian with mirror image! :-D) Either Dragon Disciple or Eldritch Knight might go with that combo, to make your character tougher while still getting spell level progression.
Again, I'm just speaking theoretically. I'm not great at formulating builds, so take that with however much salt you feel is appropriate. ;-)
Hmm, I was going to explain my reasoning behind this. But the more I think about it, it sounds like it would be a bad idea. Most of the Barbarian's utility comes while they are raging, and as you said, I wouldn't be able to cast spells during that time.
Though now, I want to try an unarmed Barbarian who uses either the Pummeling, or Dragon style of hand to hand combat. I like the idea of a Monk undergoing years of rigorous mental and spiritual discipline to learn these fighting styles, and then in comes a Barbarian who just roars like a mad man, before performing the same techniques!
Might be best to go Slayer/Sorcerer - Slayers get more feats that would be useful when going melee style sorcerer.
