So far it seems that there is not right way, and simply going with a toon you want to play is more interesting.
Accept the fact their will be things your toon will not be able to do and enjoy the things you can do. I plan to restart and do the same as you, maybe not to that extreme, 4 in the int and psyche and 2 in the physical skill. And then do another play through with the opposite.
Your set stat (i.e. Intelligence) not only determines your skills from that stat (1-5) but number of times you can lvl it up - a character with 1 manipulation can only lvl up manipulation skills one time (1->2), while character with intelligence 5 can level skill 5 times (5->10).
Also, you can die fairly easy from stupid things. I've tried the setting you talking about and I've died from a heart attack trying to reach my tie on celling-fan.
I don't beleive the game has 'soft lock' scenarios (where you can keep playing but are effectively in a game over scenario because you can't do something), nor does it feel like it has the Deus Ex Syndrome (where it tricks you into thinking you can go all stealth then dumps you into a boss fight you must fight with a tranq pistol)

You can't "gimp" yourself. If you don't try for physical feats you have no chance of winning (crazy acrobatics, taking on a huge 'roided out Union man for instance) then you'll be fine.
