Higher FOV gameplay

How can I make the output on my main monitor a higher fov like this guy?

everything just looks more clear and visible, compared to being very zoomed in.

You need the CameraPlus plugin. It also has an option for a third-person camera:

First you need to install IPA in order to use custom songs and mods: https://github.com/xyonico/BeatSaberSongLoader/releases

Then you just put the CameraPlus mod into the Plugins folder:
https://github.com/xyonico/CameraPlus/releases

Keep in mind that the mod causes the game to render a unique camera angle to display on your monitor instead of just mirroring the headset's camera angle so it does increase the performance requirements.

No and I'm not even sure how that'd look like. Your VR fov is capped by your actual optics on the headset.
