Yes it is possible. Some people can figure out puzzles quite easily whilst others take time.
Everybody has different stress levels.
Imo, they're not fun if they're too difficult. But that's just me. Your mileage may vary.

there's like a few that was just incredibly difficult even after me giving it days, it just never clicked in my head
are they worth playing? don't wanna waste my time if they are not as exciting as the main singleplayer play-through because i generally do not trust community
After a while you'll get the feel for who's maps are easy and not.
No offense but the initial question is kinda stupid. It's ok to struggle with Portal's game mechanics since it's some of the most innovative twists in gaming history, yet Portal does an extremely good job in explaining the player how everything works. In terms of difficulty, the campaign is NOTHING compared to some workshop maps. It's a very well designed and fair puzzle game, it's just a very uncommon puzzle mechanic as well.
If you (Z) have problems getting used to it, it may in fact be not your kind of game, but if you see progress some day you will also see the endless possibilities the workshop unfolds.
technical things and too much thinking sort of overdoes it for me most of the time, i prefer to be simple about these things. That stated, i didn't find too much challenge in the puzzles, they are often easily deceptive.
having played portal reloaded, that wasn't that difficult either, it's about accepting in simple terms what you can and can't do and simply work around it. again i took my time on that and completed it in 6 hours.
