With the proper skill setup(mostly involving buff spam), a level 20 can take down a level 90+ boss, or even 140+ boss.
There are standard quests you pick up in town that require monster kills or drop turn-ins, but on the field, there are event areas, known as "Episodic Quests" that you can go to, which spawn some mobs. Killing those mobs often rewards you with Experience, a bit of money, some materials for enhancing weapons and armor, and every now and then a treasure chest with some good gear in them.
The catch with Episodic Quests is that some of them, as the name implies, are episodic. Completing a certain Episode Quest may lead to another one, which will eventually lead into a superboss that is much tougher than bosses of the same type, or have gimmicks that make them somewhat different from others. The reward for beating an Episode Boss is usually some rare gear that has a lot better stats than most other stuff you can get in the area.
Once you beat an Episode Boss, the episodic quests for that chain reset, and you start from scratch again. Alternatively, you can go to multiplayer(once you've unlocked it) to fight an Episode Boss, and once you kill it, you need only leave the area and come back to have it infinitely spawn. If you like a piece of gear and want to keep farming the boss for better stats, this is the main method of doing so.
Also, regarding gear, you can get the same sword twice and have totally different stats depending on rarity. As an example:
Generic Example Sword (2* rarity): +100 Atk, +10 STR, +10 VIT, -10 DEX
Generic Example Sword (5* rarity): +100 Atk, +37 STR, +50 VIT, -20 DEX, Attack+10%
The difference in rarity of a weapon or armor you get from a treasure chest dictates its stats and its growth upon enhancement via blacksmiths.
But anyway, there's not much really special about SAO: Hollow Realization, it's just a JRPG that happens to have a pretty good battle system and a decent skill tree that you can abuse to hit several times harder than you normally would...
... like going from 3,000 damage per hit to 40,000+ damage per hit.
Chances are, if you're leaning towards "yes", you'll like it.
If you're leaning toward "No", then don't buy it.
