I think it would be reasonable to always recenter upon switching from autopilot to manual steering.
It would also be reasonable to keep whatever the current autopilot vector was. For "hold position", the vector would be one that holds you in place - usually zero - whereas for "navigate to...", the vector would simply keep you heading towards wherever you were going.
In short, there should be no immediate change in speed or direction after disabling autopilot, or if there is, it should be in the direction of slowing down and stopping (i.e. resetting to neutral).
