Joining lobbies as a player should be safe, I haven't heard of anyone getting hacked through the lobby or multiplayer. Having to download a bucket load of mods can mess up your Baro installation though, or make it slower to load up as it has more to handle than vanilla even if you have the mods turned off (they will still be checked for updates, and some mods will conflict with one another, or possibly corrupt your Baro installation / save game files). I prefer not to play with mods for this reason.
Generally, any such problems are rare as far as I'm aware.
You didn't find anything in your search because there is nothing to find. It's a non-issue.
Plenty of games on Steam ( but also other platforms ) allow players to host their own games or join games hosted by random people on the platform(s). It is actually very common. Just to name a few, Project Zomboid, Stardew Valley and Valheim allow people to do pretty much the same thing you can do with Barotrauma.
Besides, you have an extra layer of protection with Steam authentication.
I regularly play online with complete strangers. I also seldom host games myself and let randoms join. The worst that happens to me is that they will notice I'm the moderator here and will try to kill me in the game.
