I've also had to deal with hosts that were griefing themselves then close the server when people find out. It's kinda wild out there.
If you have it in your heart to herd cats and make a good environment, you should probably host yourself.
I remember a while back there was one server of a captain trying to roleplay out an ethnic cleansing, and they tried hard to take it seriously.
♥♥♥♥ was just cringe.
I bring it up because the concept of a griefer pretending to be a serious RP to ruin people's experience (while not out of the realm of possibility) is a very far fetched idea.
If anything were to be guessed, I assume people who run Serious RP servers are just narcissists with a god complex. The exact same ♥♥♥♥ you would see from GMOD rp servers. And everyone knows those guys DO take themselves seriously.
I don't want to say your claim isn't ♥♥♥♥♥♥♥♥, but I just can't excuse god complexes, and admin abuse on griefers alone.
Personally I don't see any benefit in ever killing anyone in this game. Plenty of non-lethal options available so you can power trip while still letting people play.
Accept your bans from griefer hosts as a badge of honor and move on.
Edit: Most recent example, I join a game, and begin upgrading the oxygen tanks from normal quality to good quality so that the dive teams don't have inventory tank stacking issues. The host walks up to me and asks what I'm doing. I answer that I'm upgrading the oxygen tanks to good quality so the dive teams don't have inventory stacking issues. I am immediately and without another word banned.

Yup, the "community" is mostly bad.
This is the most off-putting about Barotrauma (bugs and stale old limited gameplay and bad balance aside, mind Steam counted 362h of BT running here for me, a chunk of it is offline and the editor).
I avoid roleplay (often as described) and also usually serious servers (often boring or otherwise disappointing) which mingle and both display what was described here.
I would never "explain" griefers with this, though. Come on those people just want to annoy others as much as possible and also display their "power". So it is more of the same. Bad.

Its really not magic to evaluate if any random public server is trash or not. Just use a brain...
I think it's very important to get the vibe out of a server before doing things that may be out of the ordinary, things that may sound suspicious. First of all, the description of the server along with the server's name are often good indications as to what to expect from a session. Then, there's the players inside the game. Do they sound casual? Nervous? Uptight? When I join a game, I like to do very simple things and see who is who before I truly engage in RP.
I also communicate a lot. A very important and underestimated act to do when you join a game is to report to the captain directly and presenting yourself. If someone joins a game without saying hello, or if that person gets in the sub and starts taking and manipulating things without apparent reasons, it raises suspicion and tensions can arise. I also like to inform my captain whenever I do something meaningful. If I'm a mechanic and a hull has been breached and I'm the one fixing it, I'm telling the captain. If I an a medic and I see we lack bandages, I tell the captain I'm making some. If I'm an engineer and I see something I could wire up, I sure as hell tell the captain before I start. Asking the captain for permission to do certain things is even better because it makes the captain feel more secure about you and the deeds you're doing within the sub.
