You really need only human captain and medic, and you're golden.

For the general question as a general answer: yes
For Barotrauma: I do not recommend
By the end of the day it is a matter of personal preference, and I welcome it the more people buy and enjoy Barotrauma. Yet I also see it like D&D. Starting a table with just one or two is not entirely impossible, but you miss out on potential.

Also 2 people are more than enough beat campaign that way.
You can hire bots to do all the roles
But I do recommend 1 person being medic - not because bots can't heal but for the alien genetic perk. The medic should be the person to loots dead bodies of aliens in order for chance of getting alien genetics, and bots can't loot bodies.
The 2nd Person maybe Mechanic - for the mining perks. That way you get more ore easier.
