But really, the best advice is #1 - 20-30 planters then forget about them and do some missions. Bulbs grow real fast when you have a bunch of planters and are engaged with other activities.
To my mind there are only two plants worth having, and probably only in multiplayer - tobacco and pomegrenade, but you really have to watch the pomegrenade or have a bot or two on fire duty as there will be exploding mutant fruits. I put quite a lot of effort into harvesting both in solo mode but really it wasn't worth the effort, the main benefit of plants is in multiplayer as it keeps your crew from getting too bored.
Salt vine best plant in the game, gives me infinite sodium so I can craft millions of C4, get my combat skill to 100, and arm every coilgun with enough Explosive ammo to kill every single Endworm on Europa.
Not so good for solo play as one leak and you're talking explosion city. Also, I really haven't felt the need for it as mining provides plenty of sodium minerals (which are not volatile in water, so safe to store anywhere). I prefer pulse laser to explosive coilgun - more accurate and can do a lot of damage per shot with crew buffs.
I find on bigger ships that the danger of explosions isn't really that high, losing the harvest is the biggest annoyance if water gets into the chamber. I've found on multi-player servers that we never seem to get enough sodium from mining missions, so salt vines guarantee we can make a decent amount of ammo.
I find that explosive coilgun ammo is easier to use due to the high fire rate and splash damage, but it still does very large amounts of single target damage. Not to mention, it absolutely destroys pirate submarines.
But it's not just coilgun ammo, sodium is essential for practically every weapon in the game appart from melee ones. It's a critical part in all hand weapon ammo and many grenades, so having lots of sodium means plenty of ammo for the dive team instead of them going out with harpoon guns and knives.
