Yeah mining took me a while to figure out too, I kept trying to mine the cosmetic coral and background elements, or checking white patches from the sonar, rarely coming across minerals...until eventually I did a mining mission that showed us exactly what to look for.
After that we learned about mineral scanners, and it became a lot easier to locate it. One of our group was always on the mineral scanner, calling out minerals when he saw them. Helped a great deal, but eventually you'll realise mineral clusters spawn along the cavern walls so much that stopping and starting will get annoying, especially if it's for "useless" minerals you don't need, lol.
Good luck with your future mining endeavours!
