I started my zombie vineyard and winery/brewery earlier (before opening up the tavern). My booze supply kept up until I hit the 70+ tavern quality range. Suddenly the 6-7 chests of wine and beer were empty, the storage racks under the tavern lay barren. My wallet bulged with 350+ gold.
The last game I started I decided to avoid the tavern as much as possible as a gold source as a challenge, as well as the "Only 26 White Skull Corpses In The Graveyard" challenge. I've been making my gold this time purely from sermons and selling crates through Merchant.
On the other hand, that stress is self inflicted. There is no penalty for not supplying enough.
Each bottle the player had produced is sold (2.5silver for gold wine, 2s for silver one...), for each bottle you tavern gets reputation. There is no reputation loss for selling less than you could.
No penalty. Tavern sells a couple times a day, with a maximum number bottles limited by the tavern reputation. But you can sell less. It is only opportunity loss, no number is going down.
