First there are 2 type of fertilizer.
Quality (the star) = increase the amount of all yields by +1 per level (products, seeds and waste) and upgrade seed quality if possible
Speed (the hourglass) which reduce the time take for a crop to reach maturity.
Peat act both as a speed and quality (both of bronze quality).
Also to note that you can erase fertilizer.
If you add a gold quality fertilizer, then add a silver or peat only the last one will be applied and replace the gold.
I still wouldn't use any quality higher than peat on carrots. The +1 /+2 is not worth the time to make the fertilizer.
You will lose some seeds, but going to the farmer every once in a while seems better than spending time making fertilizer.
quality crops can be a little more tricky as your lower quality seeds convert over time to higher quality that can leave you without enough seeds to replant, but as long as you have a few spare, that shouldnt be a major issue.
depending on DLCs owned, silver fertilisers are either a little way into the alchemy tree (base game) or a little way into the soul healing tree (better save soul DLC)
