For what it's worth the DLCs do make the game a lot easier once you've a handle on the base systems.
Stranger Sins in my opinion is probably the best of the bunch which give you a tavern to run and a few extra quests which helps to explain some of the back story. You won't really see any of this until mid-game though.
Better Save Soul was a bit of a let down. I still liked it but the new systems (for me at least) didn't add a whole lot into the game, and the story was... disappointing. It is an early game DLC so you can ump into the story pretty much straight away and finish it reasonably quickly.
Game of Crones is somewhere in between. I liked a lot of the humour in that story line but it's nothing all that special. You can make a start on the DLC pretty early into the game and last pretty late into the end game.
The best DLC is Game of Crones. It is not only the largest but it more like the main quest. What it brings to the table such as bags, endless supply of food later in the DLC, and special perks make this DLC much more enjoyable.
It also is objectivly not a late game DLC as the only check that prevents you from going forward is a 40 relationship with the Astrologer. You can finish the DLC pretty early on if you want to.
The worst DLC is Stranger Sins. What the DLC is all about is just a exposition dump. It is just a movie that explains the lore of the world, and then have fetch missions. It might be fun for the first time, but after that it is pure tedium. That a DLC explains the lore is great and all, but lets not ignore that it is very tedious. This DLC is the only DLC that is objectivly a late game DLC. To finish it you need something like a 70 or 90 relationship with Snake, and at that point you have pretty much solved all issues you can have and can finish the game at almost any point you want. This forces this DLC to be a late game DLC, so the 10 gold you get for finishing it is rather pointless as you needed it earlier. The best part about the DLC is that you can actually sell gold beer which can not be sold in the default game.
Better Save Soul was a bit disapointing in the story department yes. However it does bring a much MUCH improved game. The ability to remote work is awesome as not only do you get the points for the work but it is also automatically collected in the storage units. That you can create 65% zombies instead of 30% Zombies is also pretty awesome as that really helps with slow and grinding work. That you gain 1 gold piece early on and get access to a better prayer for more faith at the start also means the bottlenecks of early game play is removed, which helps with lowering the pointless grind.
What Better Save Soul lacks in the story department is something it makes up for in the mechanic department.
So my ranking is:
1. Games of Crone
2. Better Save Soul
3 Stranger Sins
