In your case you only got the 10s because you had nothing for Yorick to sell from his inventory during the event.
But every event has different guests who prefer different things. For Graveyard Fest bronze and silver beers are OK, and the gold beer is rated as "meh" (official nomenclature:)) and sold cheaper(!) than bronze beer.
On the second tier event (names contain spoilers:)) gold and silver beer results in a happy customers, but bronze one - meh. And in the 3rd tier event all beers result in "unhappy" customers and are sold very cheaply.
Booze is the best for the first event (you can experiment with different things or just read wiki), and I would recommend planting apple trees from Clotho. Tons of booze and do not obstruct wine production.
The triggered event happens whenever you choose to hold an event using the blueprint table. The food is pulled from the bartenders inventory, and sales consist of nearly all
available consumables, each event having a preference in what the patrons want to eat.
The beverage sales take place at regular consistent intervals, pulling stock from the racks in the tavern's cellar, based on which racks are stocked and with what beverages. A zombie porter station will show up in Sweet Home's cellar to transport any applicable beverages.
