As it's a coin flip, you could have the donkey not come for 6 days in a row, but it's unlikely..
Saving/reloading could have an impact. It can be used to make sure he come every day (loading before noon, going to the tavern to see if he's here and reload when he's not).
To get to the carrot drop-box point with Donkey for daily deliveries(except for the Holy day), you need to get the farm up & running, by first reading the sign in the garden area just south of the main yard space, then chatting with Horadric at the Dead Horse. Horadric then tells you to talk with the Merchant(which you can do on your 3rd in-game day), which should get you the farming permission scroll.(if Horadric doesn't give it to you, been awhile)
At this point, you just need some seeds, which you can buy from the Farmer at his home on the south side of the massive wheat field you pass through on your way into town.
Carrot & Wheat seeds are good early buys, as one burial contract will give you enough cash to buy 8 of each, but once you start gardening, ol' comrade Donkey will want a piece of the action, so feel free to delay this if you feel overwhelmed, which can definitely happen in this game, if this "quick" guide to unlocking frequent corpse drops is any indication. lol
(also, Donkey's nice enough to gives you some free carrot seeds when he makes his demands, just have to do a little digging)

When you are in or near the morgue, you should see a counter on the top.
If you have as many corpse as pallet/preparation place, then no more will be delivered.
Full morgue? No new corpse. So make sure you didn't leave some poor sod lying unburied somewhere. Make a new pallet if you want, but it's easier and more profitable to just plant 'em in the graveyard - name of the game and all.
I checked, I have no dead bodies lying around, so what do I do now?
One of the things to consider is what time are you going to bed and what time are you waking up? You need to wake up around sunrise to trigger Donkey to head to your farm from the trading office at noon. This means you need to go to bed, energy fully depleted, by midnight. If you go to bed too early and wake up too early, you won't trigger him. If you go to bed too late and wake up too late, you won't trigger him. But if you go to bed a bit late and still wake up at dawn it will usually trigger. I did that and triggered him for ten days straight but it made it hard to do anything else, so I just hurried up and opened the church.
It's much easier when you can trigger him with the carrots once the church is open but you need to open the church first. You can do that despite only burying one corpse - it will automatically trigger another corpse from an angry Donkey, and then make sure you have carrots because that will be your new trigger - Donkey will demand carrots by the ten, which equals two corpses, with the exception of the first corpse he holds hostage for the initial 10 carrots and seed oil (get it from Dig, don't do anything with it until Donkey prompts you for it.) You will then have the option to put a bunch of carrots in Donkey's carrot box for nonstop corpses (unless the morgue is full) or only trigger two days of corpses, except on -Sundays- Bishop's Pride Day.
That does sound easier. So how do I open the church?
Simple: you just need to raise your Graveyard Quality to 5. Clear the brush away, which will give you red and green points and resources. Repair the fanciest stone cross and repair or make new fences and gravestones, and make flowerbeds. You can make 5 flowerbeds right from the beginning which give 2 quality each and are cheap and easy to make - 2 stone, 1 peat, and 1 red flower. So gather 10 stone, 5 red flower, and get 5 peat either by composting or buying 5 peat from the Shepherd for 10 copper. Using the flowerbeds and only cleaning and repairing what's there, and the corpse with the highest red skull rating, is usually enough to get to 5, but if you had already put in a bunch of terrible bodies, make some more gravestones and grave fences to counteract the red skull count or save your money to dig them up and get rid of them.
