Its not even the stardew vally-ness that im interested in
its the whole single character with a huge tech tree they can unlock that effects the character themselves
Oh I know, and I agree it’s quite a unique tech tree. The point grinding can get a bit old but there’s so many things to unlock it’s very satisfying.
You might also like Subnautica. Nat exactly the same and no real tech tree, but lots of exploration, gathering, finding new recipes and building a base.
The planet crafter is terriforming game. Similar in a large tech tree and building lots of stuff,
But I keep going back to Zelda games that are sorta similar.
Im thinking arpgs are the closest with tech trees around the player but the mechanics are different with the hack n slash.

GK is sorta unique borrowing from a few genres. Its why its hard to compare straight up to other games.
Have you looked at the Dungeons series of games?
Its not massive tech tree, but it will take lot of time to be able to unlock all.
Medieval dynasty is not story driven game and can get really boring if you are story driven person. Its open sandbox game where you can build your own village and get npc:s to work for you.
