I totally agree with you.
Regarding DLCs specifically, I'd honestly wait on them if you're completely new to the game, as there's no particular rush to buy them and no guarantee you'll like them. The first DLC was integrated quite well, to the point that it's included in the base game on PC. The second two are proper 'attachments', which is kinda what DLCs are meant to be, and are completely optional.

Opinions are mixed because of the state of the game before the zombie update.
Now in the first part of the game you craft and gather a lot but once you get the zombie tech just make basic zombies and they can be like production lines.
Curently zombies can do almost anything on their own so its much less grinding.
To get everything its a 20-30 hours adventure. This is not an easy game, if you dont play it smart you will progress very slow.
As for the dlc, get the first one since it fixes some progrrssion issuss and its very fun and makes a lor of money. The crone dlc is meh
