Selling Stuff
Well I have been hoarding my stuff far too much just making new trunks whenever I needed space rather than just getting rid of the crap. I'm still quite a bit of silver from the trading license so who should I sell my crops/finished food to?

The merchant can buy some Gold-star quality foods at Tier-3 shop level, as well as Gold Quality Wine. (decent money if you sell him ~20 every week)

As for crops... Save up your Pumpkins, Lentils, and Onions for after you get the trade license, since you can then take advantage of the Merchant's crop-shipping system.
Though it's only for those 3 vegetables, and only at Silver/Gold quality of them.

The rest of the vegetables...
I dunno, if the Farmer to the south of the Wheat Fields doesn't buy them, then I don't think anyone does.
The Miller at the north end of the Wheat Fields will buy Flour though, if you have Wheat that you crafted into it.

The Tavern master buys some Bronze/Silver quality foods (but not Gold) as well as Bronze/Silver Quality Wine, if you can make it.
Wine is decent money, if you've been farming grapes.

Also if you have too much Crop Waste, the Shepherd at the rear of the Dairy Farm will buy it for 1 Copper apiece (up to a certain point, where it'll go down to 0)
Well hot damn, thank ya.
I have over 200 bread. How did it come to this.

Pfft, the Bishop will buy bread when he stops by.
I just get caught up in all of the different things you can do and forget to take them to him on sermon days. Been trying my damnest to get all of the alchemy going so I can start making better prayers, issue with that is I need to get the Bishop whatever that fish he likes is so I can get a bigger church.

The silver-quality fillets?
You should be able to catch the proper fish by fishing at the waterfall across the bridge to the left of the church using the basic fishing rod with Maggot as bait.
Silver quality fish will turn into silver quality fillets.

But wow, 200 bread lol!
Might wanna space out selling that, I'd be surprised if he paid even 1 copper for the last few bread if you dumped it on him all at once!

The best tip here would be to stop hoarding items at all. You see, most of them cost nothing, so you just waste time, effort and resources by overproducing. The main source of cash will always be cermons, so concentrate on your graveyard quality, try making 11-12 skull graves.

Cook Onion rings using Bronze Onions, Horadric buys them.
Cabbage, Beet (I think carrots too, but I save them for donkey) Farmer buys them.
Bronze Hops (not sure abolut Siler cos I save it just in case) Miller buys.
When you get the recipe of 'A mug of mead', only make for the quest. I don't believe any one will buy it. I wasted making some. So I only use it for energy.

What triggers this?

But you see, if I don't fill all of my trunks with literally everything I pick up how will I fill the empty hole in my soul?

Selling to the right person?
It's the same NPC who sells Peat.

Make wine, Dead horse buys silver and bronze, merchant buys gold. Mine coals and make simple parts and sell it to the smith. These should give you about 30 sliver quick cash. You can push it a little bit if you need to, but the price drops, and it takes time to recover to normal price.

for vegetables mundanes that have no quality can be sold to the seed vendor (farmer), wheat to the miller, obviously.

edit: innkeeper sells the fish fillets if i recall, you can just outright buy almost any quest item typically.

Merchant buys silver bars as well. I've made quite a good amount from that.
