There are a few villagers that don't have a sign. Beekeeper is one (to the left of the Dairy Farmer). Potter is another (to the left of the Blacksmith).
If you start doing rounds before midnight from north of the church and keep going north until you hit the wall and then make your way back to the apiary area, you don't have to wait a long time to harvest from your beehives again by dawn. So basically can harvest twice a day. The only limit is your stamina and health.
I'm at the point I got so many honey I don't know what to do with them. There's only so many cake I can bake. I only keep harvesting them for the wax. LOL.
