Long answer; You have potentially two known variables - the level of the farm, and the efficiency of the zombie operating it. One may also need to consider things like the Farmer perk, along with the random chance that is present throughout many aspects of this game, including farming.
The farm's level simply determines the produce yield (going from 32/20 to 36/24 to 40/28), along with unlocking higher-quality-veg. However, there certainly could be other hidden variables, such as the rate of seed production, but it would take a LOT of trial-and-error to come close to figuring this out for certain, which I doubt anyone has bothered to test extensively. At the very least, zombie farms do receive at least some seeds back from their operation.
A zombie's efficiency is just as mysterious; they certainly seem to perform their work faster, though it's near impossible to prove that the quality of their work increases, or - in this specific case - if they return more seeds. Having said this, when my farming zombies were <30%, I needed to supplement their seed production, while after I eventually got around to upgrading them to 40%, I haven't since - I actually think it's been net positive.
Layout: It's mostly personal preference. You could build as many as 6, but I find 3 to be more than enough - 2 running gold-veg 24/7 for the Merchant, and the third doing anything else you might need (carrots, wheat, etc. - or lentils, so you then won't have to worry about garden-bed-with-sticks). The one crop these farms can't produce is hemp, so I'd dedicate a 3x4 section towards that until you're confident you have enough.
