They are way to slow which let's them get demolished by anything ranged.
I'll keep them for the early game if I already start with one but otherwise I never recruit them

No you can’t doomstack giants. Giants are very good at tying down infantry and excellent at fighting other single entity units. Giants can be a great tool, you just need to support them. You can’t just throw a giant into combat and forget about it for the rest of the battle.
Your biggest concern is enemy missile fire, so if you intend to use them, make sure to have units that can either remove or at least distract/engage enemy archers(usually cavalry).
As for ranged picking them off... I don't think they are meant to go in first. I don't think they are great as a doom stack.
While "doomstackiness" point is really on-point (sorry for repetition :)), i disagree with last part of message.
No, gian is not good in tyingdown infantry. It looses to lowes infantry. Too low melee def to surive and make him worth a slot. And no, they are not good to fight single entity units either. Slow speed and mass (for unit of this size) does not make em good, also slowish attack and already mentioned low MD works against him.
However you`re absolutely right, that they can be good if you support them. Cover their weak sides (that are plenty, unfortunately, but it is managable) and they can serve you good.
And in practice, they're not anywhere near good enough at killing infantry (what they're supposed to do) once they get in melee to compensate for their weaknesses.
Unless doing it for the memes, I'd only ever use them as Beastmen, because one of them is still better than a unit of ungor spearmen/raiders or Chaos warhounds.
