Driver timeouts or black screens may be experienced while playing Assassin’s Creed® Origins on some AMD Graphics products such as Radeon™ RX 580 Graphics.
That should help with your performance as well.
Put game on all high setting. Except shadows, fog, water. Keep those on medium or low. Screen space reflections to low or medium as well. Turn off volumetric clouds and ambient occlusion. Character detail keep on high.
From the videos and benches I have seen, your GPU at 1080p will average around 50-55FPS at high settings. With dips into the low 20s and 30s.
So if that is the performance you are experiencing than it is normal.
This benchmark shows that my card should be able to handle the game pretty well but I don't experience this sort of preformance on my pc.. Ac Valhalla runs better on high 1080p than Ac origins.
Plus the game(AC origins) isn't using my gpu properly only sits at 60% jumping at 20% every second.
Just to double check. When running DDU to clean out display drivers you did so in safe mode and completely disabled internet until after new drivers were installed?
When upgrading to new GPU, especially going from NVIDIA to AMD. It is essential that display drivers are cleaned out completely to avoid conflicts.
Here is a list of things you can try to boost performance.
Have you checked for Windows 10 updates? Make sure you are on latest build with no optional or preview builds.
Disabled xbox game bar, game mode, background recording, and make sure GPU scheduling is disabled? Disable any running GPU tools like afterburner. Those should be disabled as well.
Disabled background services, tasks, and programs that are non essential? Using Task scheduler, msconfig, and task manager startup options?
Have you checked for motherboard BIOS updates? If there is an update I would recommend defaulting the settings first. Than apply the update. Once complete load the optimal settings of your choice as well as selecting the proper XMP profile if supported. I know you have an old system but its something to note.
Disabled all peripherals and disable software associated to them with exception to M+KB? Some things like headsets can actually cause low performance in games due to bad software. Or mouse DPI can even cause issues if its too high for certain games I have seen reports on.
Those steps a re the most common that would be affecting performance on a CPU.

If using DDU and putting the game to the settings I suggested. What is you current average FPS at 1080p?
You can always check to see what is running and how much of your CPU is in use before launching Origins, but all games perform differently.
Plus, you now have to deal with drivers from AMD. Which from following the threads here, a lot of people have issues with the 500 series cards and this game.
If the above steps do not help you I wouldnt waste time doing a fresh install. Its most likely just the drivers for this game are just not that good.
Also I forgot to mention but when i first upgraded to my new AMD GPU i didn't fully uninstall the Nvidia drivers.. I only deleted them using DDU after i had installed my AMD drivers.
Also I did not use the DDU in safe mode and my internet was on throughout the whole time, Along with the problems I said up there.
What is CPU usage not running the game?
Important. If you didnt uninstall drivers prior to installing new GPU that can def be an issue, and if you didnt follow the guide for DDU it wasnt done correctly.
What you want to do is disconnect or disable your internet. Boot windows in safe mode. Run DDU. Uninstall NVIDIA and AMD display driver. May need to do NVIDIA first, reboot again in safe mode, than clean out AMD drivers.
Now that both drivers have been cleaned out, boot to windows normally, but make sure internet is still disabled. Install latest display driver from AMD or one I mentioned above.
Once the display driver installs successfully, reboot the PC even if there is no prompt to do so. Once windows has booted enable your internet again.
Try origins and see if it helps.

I am still facing the problem with ac origins as I couldn't find the time to safe boot my computer and then install the drivers,
I've been busy with college and in the spare time been playing Ac Valhalla,
I will try to do it today.
Also I read somewhere on reddit about a guy having the Same problem switching Gpu without removing drivers, they suggested to reinstall windows. Do you think that would be a good idea?
No, run DDU and remove both AMD and NVIDIA display drivers. Make sure to follow the steps as I mentioned above. Than install suggested driver or latest one from AMD.
This will save you a lot of time instead of reinstalling windows. As it will have same effect of a clean windows install as DDU is very efficient in cleaning up the display drivers for both NVIDIA and AMD.
Also, disable steam overlay and Ubisoft Connect overlay. This has also caused performance issues.
Anyway, all the steps I mentioned above seems like a lot but is way quicker than doing a clean install of windows and having to install everything else with it.
Restart.
The shutdown is used if you are swapping out a GPU.
