Shoot them with a bow from a distance. Go slow and don't run up on them in Snaky areas.
It's funny that I can play the Snake game from old Nokia with pleasure. :D
I am gonna try to play some cool music in the background and just rush the snakes and let you know how it went.
I once found a Big wolf spider in our bedroom, probably rode in on one of our dogs.
I jumped on the bed and called my wife, she put a clear bowl over it and slid a piece of thing card board under it.
We put is back outside, but I could never use that hand made bowl again.
Job done.
I understand it must be very difficult to deal with the snakes in-game if you have a fear of them, and of course they always tend to take players by surprise.
Soothing music is a great idea :) as "epic game 200" suggested it's always best to bring a torch when venturing in pyramids and caves. You'll be able to see the snakes a lot easier and fire works against them very well.
I hope you're managing to enjoy the game :)

Thank you for replying and for being a part of Ubisoft. You guys make wonderful games! <3
I would just use a torch and when/if you hear hissing, turn around and walk out. I know you're missing content but also know that these things cannot hurt you in a game. Use your bow to keep a distance and show those hissing nasties who's boss. Hope it works out for you because they really did a wonderful job with the hidden tombs.
