I am looking to buy one of them
Far Cry 5 is a cardboard copy of every other far cry with a less interesting setting.
AC Origins looks MUCH MUCH MUCH better!
1) Subjective
2) Both have a pretty good Open-world, depends on what scenery you prefer.
3) AC:O. Stealth is absolutely messed up in Far Cry 5. It's more of an open shooter than anything related to stealth. Also, FC5 has one of the worst AI I've ever seen in a video game, it's disturbing.
4) Again, subjective. Both have plenty of things to explore.

2) Both have open world so it depends on you. Far Cry 5 is based on Modern times while AC:Origins is based on Ancient Egypt.
3) AC:Origins triumphs over FC5 over a long mile.

On point 1 and 4 it totally depends on your personal taste.
I gotta admit tho i dont know AC origins is just not really what i expect from a assasins creed game. I wish in the next title they wil just put more stleath into it instead of the beast mode stuff.
1. Far cry 5 is much better looking in my opinion, origins is nice dont get me wrong, but since far cry 5 is first person you can appreciate the look much more, the cinematic shots are also great
2. Both have great open worlds, you can do more in far cry 5's though, like fly planes and the like. theres much more stuff to do in far cry 5's world, whereas in origins, the world is kinda just there, with the story just traversing through the world
3. Both are good for stealth, but far cry 5 has better stealth mechanics imo. origins stealth is kinda bad, as the npcs typically magically know where you are for some reason.
4. Both have gorgeous open worlds, but origins has more cities and civilian areas, whereas far cry 5 is more about liberating areas rather than exploring big cities. Origins wins here i think, but far cry 5 still has excellent places to explore, but if youre into the more big city feel, origins is your man, as far cry 5's biggest town, falls end, only has like 10 buildings in i
Both have a lacking story, and both have a beautiful and fully open world to explore. You may feel like there's "more" to do in FC5, but more doesn't necessarily mean it's quality content. Both games are fun and enjoyable, and every point the OP asked about is 100% subjective except for the stealth mechanics, which are meh on both games, but AC:O probably wins there because of the really bad AI in FC5.
That's a bit ironic you'd complain about that, in FC5, either the AI can magically see you kill an isolated guard from far away and through walls or completely ignore you while you're standing in front of them. More than often, they ignore you. Can't see you killing someone they're looking at, and can barely spots you when you sit in front of them.
The AI ruins FC5 for me, even in open combat, they can barely shoot straight or they just stand there waiting for you to kill them acting like they don't see you even though you're literally in front of them shooting.
Don't get me wrong, AC:O's AI isn't perfect either when it comes to stealth, but it feels less stupid than in FC5 to me.
Both games feature a bow, a wonderful tool that ruins stealth if you use it because it makes stealth absurdly easy. In AC:O you always know when you're going to score a deadly headshot BEFORE shooting so you can't really miss (you can manually control the arrow anyway) and in FC5 you don't even need headshots to kill. But it's your choice to use it or not.
That said, both games are enjoyable and do a decent job on their own. Choosing one or the other is mostly subjective as they play differently. What scenery do you prefer ? Do you prefer FPS with guns or melee combat in third person view ? What setting appeals to you more ?
I doubt stealth's quality is a major factor in your choice, if that was the case, you would look at stealth focused games with a dedicated stealth gameplay rather than these. In a way, both ACO and FC5 have a similar stealth's "quality" overall anyway.
