Both dlc's will give you new weapons, outfits and mounts. Dlc1 you get 1 outfit and 2 mounts, dlc2 you get 2 outfits and 1 mount plus various weapons in both. Playing them early won't realy spoil too much as far as the story goes. The hidden ones maybe a little but curse won't spoil anything..
So again it's really up to you I mean they wouldn't have added the option to boost your character straight to lvl 45 if it was gonna spoil anything for 1st time players.

So to summarize, if i wait until i beat the main game, and then Play the DLC, i am not missing out on anything?
I ask this question this way because there are games out there like Mafia 3, where the DLC actually enhances the main game, and is quite boring if you play it exclusively after you have beaten the main game. But based on your reply, choosing to play the DLC after beating the main game is probably the preferred way to go anyway (due to level restrictions)

You're not missing out anything by playing the main game without the DLC.
However, both DLCs increase the level cap (it goes up to 45 with the Hidden Ones and to 55 with CoTP). Since you're a completionist, no doubt you'll reach lvl 40 before finishing the main game, so if you have the DLCs when you reach that point, you can start leveling past 40 in the main game (before ever touching the DLCs).
That said, you won't "waste" exp by not buying the DLCs as you'll keep on gaining ability points after reaching the level cap with the exp. The DLCs are really generous in terms of exp, so you'll easily reach the last levels even if you've completed 100% of the main game without them.
With the DLCs installed, I've reached lvl 52 just by doing the main game's content. I was lvl 55 before finishing the first DLC (and it's supposed to start around lvl 38 and finish at 45).
To answer again, no you're not missing out anything, and if you're unsure on buying the DLCs, just keep playing the main game and see for yourself if you want more or not.
Actually, The Hidden Ones can be started before lvl 40, I think the first quest is lvl 38. CoTP should start at lvl 45, that's the level you're expected to be if you have done the previous DLC.
That's why there's a boost, it's not about spoiling the story or not, it's about being able to play it even if you only bought CoTP and have finished the main game already.
Also, playing the Hidden Ones WILL spoil the story (though it's not like there's any surprise to be spoiled).
Both DLCs are designed to be played after the main game.
