All you need to do is get your angle that you want to take for your screenshot and just not touch anything for a few seconds. The HUD will go away and you'll be able to take a screenshot.

To find the Photos you have taken:
Go to Documents/Assassin's Creed Origins/photos on your computer.
Any ingame photos you have taken using the games photo system will be there.

Steam won't upload them. TNovix' method is the only viable one.

For photos you've already taken, open the map, press F3 on the keyboard or D-Pad Up on a controller to view only icons of photos you've taken, select the one you want by moving the cursor over its icon, and press down on the scroll wheel of your mouse or press the Y or Triangle button on your controller to enlarge the photo. Then, just hit your usual Steam screenshot key and it'll be available to use in your profile. The only downside is that there'll be a button prompt (for returning from the fullscreen view) visible in the lower-right corner of every screenshot you take this way, but them's the breaks.
