Takedown = Assassination?
I noticed when I do a takedown... the enemy still seems to be alive.. they are sort of rolling around on the ground... does a takedown kill your target or just incapacitate him?

Just incapacitate.
Later when you unlock hidden blade, the enemy will be killed.

Someone smarter than me mentioned using the bow while incapacitated means they don't jump back up to fight.
