It's not a big deal really, the game is not really centered around mounts but if you're going to add a mechanic it helps to do it properly. I literally never used the mounts in DA: Origins for that very reason, they were super horrible, I couldn't even stand looking at the terrible animations and that stupid "swoosh" visual so I never used them.
Horses are faster yes, but with mounted combat, a Camels height may give an advantage. I haven't been able to tell what the HP buff difference is yet.
Without Mounts the 3 Phylakes I've dispatched would still be breathing.
NPC: Get off your mount and fight me with honor!
Me: I'm a gamer, I have no honor!
As far as I know the horse and camel don't die. I think the horse is a little faster, but I'm still trying to see if there is a difference. Camels are better for the desert anyways sense they can store water, and horses can't. Horses rely on you giving them water.
Camel is a bit slower, but you are a lot harder to knock off
Historically, though, horses could not stand the stench of camels, which gave Saracen cavalry an advantage. Also, camels should be much better suited to desert travel (endurance especially), but in the game, every mount and boat behaves like Rolls Royce.
In short. Camels for versatility and combat. Horses for speed and travel.
Horses seem faster but for shorter periods of time. If it's a quick a to b jobby they seem to be better.
Camels seem to have more stamina. They take a bit longer to get going but they maintain that speed for longer, so if you're on a long journey they seem better.
I'm unsure yet if there's a difference with roads or cross country. Horses sometimes seem better along roads and tracks where camels seem better across the desert.
All of those things would make complete sense based on the actual animals. As for sticking with one mount and giving it character like Senu, that doesn't fit in the slightest. As a general rule back then a tracker would maintain their bond with one bird however mounts were always a come and go sort of deal. For a long expedition it would be impossible to keep the same mount unless you were giving it time to rest at spots. It was usually get to this location, swap for fresh mounts. Keep going.
There does seem to be a difference in speed but not combat, which was tested on reddit, if you'd like to read the full discussion.

Yes they do.
I wanted to see if Eternal Vigil was flammable (killable) and came back to life.
Wasn't disappointed. Best Mummy camel ever.
Question: is there a way to make the mount speed up? I can't get them to move any faster than a slow trot.
