Well guys I got the problem 99% fixed but there is one issue I just cant figure out...
The way I fixed it was by first Launching big picture then library -> MH:W -> game settings -> Controller options -> then force off using steam controller settings for non-steam controllers.
Then after that I went back to the main controller options and unbound every binding for every tab for the xbox controller.
Everything is fixed however for some reason RB(default sprint) still spins the camera after you press all of the keys ingame, but every other binding seems to work now... Still really frusterated still however, let me know if anyone finds this helpful or finds a workaround this issue.
Steam - Settings - Controller - General Controller Settings.... in there I see at the bottom a large button with my Xbox controller (this part was always there). The new option I believe is when I click this button, a "Define Layout" button appears. I clicked it and defined the mapping of each button. Now it's working.
I believe it has something to do with the update prometing the use of controlers with big picture
