Should also note that until you beat the base game, ranks dont even work like that. You go up in ranks as you complete assignment quests. optional andevent quests tally in the background but they wont effect you hunter rank until after you watch the credits
You prep for a hunt by crafting weapons, armor, and putting potions and stuff in your bag, then eating a meal to gain various buffs. Then you go on the hunt, and the goal is to just beat the "boss."
Some quests are for other things too, like "collect x number of mushrooms" or something, but they are rare, and they usually have some additional benefit, like adding new meal item choices to your pre-hunt meal menu.

Just to be clear: Hunter Level doesn't make you stronger in any way. You don't "level up" your character in a classical sense. It's only for unlocking some quests.
