Just keep 7/7/7/4/1/1 in mind and you won't have any issues.
If you want to have all 7's without killing thousands of monsters, you can use the Save Editor or the RegionSet mod to unlock the cap. The first one lets you level all regions as if there is no cap (after the cap is unlocked), and the second one lets you set region levels to highest you achieved before, which means you can level all regions to 7 if you leveled them all to 7 before.

Your guiding lands has a "total exp cap". For every monster you hunt in the guiding lands, your total exp cap increases by 3 * level-of-area-monster-spawned-in. So this means 21 exp increased at most per hunt.
Each "level" in one area takes a full 10000 exp each.
So, as you can have 7/7/7/4/1/1 by default, you would need to gain about 150k to your total exp cap.
What this means is you need to hunt 7143 monsters in level 7 areas to legitimately get your total exp cap high enough to have all areas at level 7.
Is it worth going for? Not in the slightest. Even at 5 minutes average per hunt, inclusive of any spawn and travel times, you have to do that for near enough 600 hours.
I do have my guiding lands at legitimate 7/7/7/6/1/1 though. But this is some 4 years later, and just going in it to mess around by myself or with friends over the years on and off. And of course, far more while I was more dedicated to playing MHW.
Note I may be remembering some specific numbers as far as exp needed wrong, but it's really not a couple thousand, it's over 7000.
