I probably missed a few.
Everything else is case by case. A lot of the time the broken part starts taking more damage, but I think it's less common than not.
Cutting off Coral Pukei's tail will remove its tail water jet move set.
Breaking Toaster's horns will negate its fire barrier.
Breaking both Fatalis's wings will stop it from flying aside from scripted events.
Breaking Ruiner Nerg's metallic spikes will let them take more damage. (Not just the white spikes. There are metallic ones mixed among white ones. You need to deal enough to break the metallic too.) Metallic spikes don't grow back.
Breaking Shrieking Legiana's belly spikes negates its ability to use ice waves and weaken ice attacks. Breaking Shrieking Legiana's head will reduce the volume/level of its scream so you need less level of earplugs.
Breaking Kulu Yaku's hands will make it drop the rock.
Breaking Barroth's mud coat will make it take more fire damage. You can either deal damage to destroy the mud coat OR you can use watermoss pods. Barroth takes more water damage when covered in mud.
Same thing applies to Jura.
Enough damage to Rajang's tail will revert its transformation. The gold tuft can also be cut off but it has no particular benefit except for bonus rewards.
Breaking Barioth's arm will make it slide after dive at you.
Breaking Tzitzi-ya-ku's head twice?( haven't fight it that much so I'm not sure) to completely destroy its only defense ability (Flash)
The only way to make him fall is hitting him with either your weapon or pod 2x while he's rolling
Breaking legiana parts causes it to lose its ice abilities.
Breaking brute tigrex's head lessens the range of roars.
Breaking barioths head causes it to not be able to cast ice blasts
I mustve read it as "breaks parts while rolling" rather than "breaks parts before his rolling, he topples easier"
to this day i'm surprised people never do this
Also, breaking Brachydios' limbs/head impedes its max slime capacity in those broken parts.
I say that both are true, but I haven't thoroughly tested or fact checked. This is simply the pattern I've noticed when fighting Baan. Somebody more knowledgeable might come in and correct me.
